Spice up your family dinner with delicious and flavorful Vegetable Korma. Vegetable Korma is a delicious combination of several vegetables in a creamy sauce. It is a traditional Indian dish that is mild, not so spicy hot so that the whole family can eat, even the kiddos! It is often served in Indian restaurants. Korma can be served with any Indian bread or rice.
Serves 5
INGREDIENTS
One and half tablespoons vegetable oil One small onion, diced One Large tomato, diced One teaspoon minced fresh ginger root Four cloves garlic, minced Three tablespoons ground unsalted cashews Half Teaspoon cumin One teaspoon garam masala One teaspoon coriander powder One fourth teaspoon turmeric Half teaspoon cayenne Two potatoes, cubed Four carrots, cubed One cup frozen green peas One green bell pepper, chopped One red bell pepper, chopped One cup cauliflower, chopped Half cup heavy cream Half cup light coconut milk Half cup yogurt Salt for taste One bunch fresh cilantro for garnish
DIRECTIONS
Heat the oil in a skillet over medium heat. Stir in the onion, and cook until tender. Add diced tomatoes and a couple of pinches of salt to help the tomatoes cook. Stir tomatoes often so that it cooks and moistens. Once tomatoes are mushy, mix in ginger and garlic, and continue cooking 1 minute.
Add cumin powder, coriander, garam masala, turmeric, cayenne and ground cashew. Stir and combine. Add coconut water and potatoes, cook potatoes till almost tender. Then, add carrots, green bell peppers, red bell peppers and peas. Stir and cook all vegetables for a few minutes.
Add cream and yogurt, reduce heat to low, cover, and simmer 10 minutes. Stir often so it doesn’t stick to bottom. Taste and add salt accordingly for taste. Garnish with cilantro and serve with rice or naan. Enjoy!
Please remove cashews for a nut free dish!
